Involtini di pollo
This dish is delicious, although it takes a bit to prepare the ingredients. Start one hour in advance, and serve it hot, with the cheese still melting inside.

Recipe

You will need:

Cut the chicken in thin slices, large and regular enough to be double folded around a nut. Cut the Speck in small pieces, interleave with cheese and fold the chicken around it. Fix the sack tight with a couple of toothpicks
Cut the potatoes in inch-sized cubes, put them in a pan along with the meat, a spoon of oil, salt, black pepper and herbes. Start browning the meat, and after a couple of minutes add water (or wine), cover and simmer. Every couple of minutes turn the meat and potaotes with a spoon, add more water if needed, and cover again. It should take about 15 minutes for the potatoes to become soft.
